Horseradish prefers full sun but will tolerate partial shade. It likes well drained, rich soil. Horseradish will spread and can be difficult to eradicate, so you can grow it in a container if you don't want to put it in your garden.
The old time saying is that horseradish can be harvested in any month containing an "R" in it- Sept-April. Wash roots well, remove skin with a vegetable peeler, and chop as fine as possible. If you decide to use a food processor, it is best to do that outside, and open away from you as the smell can take your breath away! Adding vinegar will preserve your horseradish for storing in the fridge. The longer you wait to add vinegar, the hotter the taste will be!
